Who knew salad for breakfast was a thing? Not me. But Arlene from Cooking With Sugar TV has the perfect recipe for a fast, healthy, albeit strange breakfast! This breakfast salad is great because of the balance of protein, fruits, vegetables, and healthy oils. The protein in the egg will help you stay full longer and the fruits give extra nutrients your body will use all day long. It tastes amazing, too!
For this recipe you will need: egg, strawberries, blueberries, cherry tomatoes, mixed greens like spinach, nuts, (almonds, etc.) olive oil, vinegar, Italian seasoning, salt, pepper, and any other favorite you love! Don’t feel that you have to mimic her recipe verbatim, branch out and throw in whatever you want. The sky’s the limit. I could picture adding in mushrooms, bell peppers, and maybe a different protein like chicken or salmon. I know it seems like we’re getting into lunch territory, but I’ve never been one to follow the rules of breakfast very closely.
It’s a good idea when preparing your salad to get your egg in the pan. While it’s cooking, you may start to chop up your fruit and arrange it with your greens. She likes to add blue cheese and cilantro as well. I hate blue cheese, but a Mexican Cotija cheese seems right up my alley!
